I have been sick lately and didn't feel like cooking. So I found a
pretty good use for the Walmart "Great Value" brand of canned Luncheon
Meat. It's the first of several brands of SPAM look-a-likes I posted
the other day).
Fried luncheon meat browned on one side, crispy on the other. A small
pile of Claussen sauerkraut fried dry in the same pan for 3 minutes.
And then the last minute or two I throw on some shredded provolone
over the "meat" to let it melt and some of that rolls off to get
browed. On white bread with mayo and Lowensenf mustard.
The meat sucked when I tasted it right out of the can - way too salty
and mushy. Even after it was cooked it wasn't that great. But cover
it up with cheese and sauerkraut and hide some of that taste with
extra strong mustard and it was pretty darn good.
Then I remembered I had some pastrami in the freezer. Doh!
