Spam Reuben

I have been sick lately and didn't feel like cooking. So I found a
pretty good use for the Walmart "Great Value" brand of canned Luncheon
Meat. It's the first of several brands of SPAM look-a-likes I posted
the other day).

Fried luncheon meat browned on one side, crispy on the other. A small
pile of Claussen sauerkraut fried dry in the same pan for 3 minutes.
And then the last minute or two I throw on some shredded provolone
over the "meat" to let it melt and some of that rolls off to get
browed. On white bread with mayo and Lowensenf mustard.

The meat sucked when I tasted it right out of the can - way too salty
and mushy. Even after it was cooked it wasn't that great. But cover
it up with cheese and sauerkraut and hide some of that taste with
extra strong mustard and it was pretty darn good.

Then I remembered I had some pastrami in the freezer. Doh!

I am a Hurricane Katrina survivor. We spent many weeks with nothing except
whatever was on hand.
Became an expert on cooking Spam. Almost had to cook a wedding cake on
a wood fire; got really great at smoked pizza.
Anyhow.
Slice Spam thinly; something less than ?". Put the slices on a not
greased pan and bake about 10 minutes. Turn and bake another 10. More or
less. Until it looks dry and crisp. Depends on what luxury you have. . .
like a stove.
Good as bacon, heaps cheaper and no refrigeration required, really good
with buttermilk biscuits, cheese grits and scrambled eggs. Polly

That's all the meat we had to eat. Even though I haven't had Spam in years,
I remember it as being not so bad, even sort of good. It was probably the
first meat in life! From this thread, I'm going to go to try it again. After
that it was hamburgers. Mother used to buy hamburger at a local market for
$.09/lb. Yes, that's nine cents a pound.
