I usually change mine once a month when I do a water change. If it is just floss, sponges or plain filter cartridges, remove and rinse them well in some of the water you have just drained from the tank and put back into place. This will save some of the bacteria that has colonized on the filter...
If you don't want to place your hand in the tank, you could buy a feeding stick or apparatus, that you place the food on the holder on the tip and then place it near the fish.
Really, you should not keep any fish in a two gallon tank. A betta might survive but not thrive. You could go with some ghost or cherry shrimp instead.
The tank is perfectly adequate for the two calico's right now as long as it is filtered and you are doing the necessary water changes. As they get larger you may want to upgrade to a 30 gallon tank.
It will depend on the size of the tank. That being said, a school of tetras / barbs for the mid level swimming area along with some small cory cats for the bottom of the tank, and hatchet fish for the top level of tank. The stocking levels will again depend on the size of the tank.
Make sure...
Your betta will get along fine in the fish combination you have. Betta fish males are best kept singly and are a fine community fish if kept with non-aggressive or fin nipping species.

Fish are not color blind and in fact see a lot of colors. They are color blind at night since their photo receptors in their eyes basically shut down in the darkened waters. See link below for a study done on this subject.
Sounds like a couple of problems here and both sound like like poor water quality. High ammonia levels and low oxygen level in the water. Make sure, when adding any any plants to the aquarium, that they are aquatic plants not ones for terrariums or house plants.
In a 55 gal. you could keep about a dozen cardinal or neon tetras and another half dozen larger tetras of your choice along with some cory cats to go along with a pair of rams.
The ram may be docile now, but if you have a pair and they are ready to breed, like any other cichlid they will...
