Why does you get bored of a Kawasaki ninja 250 vs 500 or 650?

I'm a brand spanken new aspiring motorist in the process of taken the classes to train myself to ride and get m1 license. Ive done smaller dirt bikes, no jumps, and atvs, quads etc all when I was younger. I want to make sure I'm safest as possible and have all the right information.

I was very attracted to the 250r because I wont be going over the speed limit, I'm not a racer and I want a bike for mostly to work commute and taking my 5'8 wife with me to near by places for recreation. I'm 6'3 not a dare devil, don't even go on roller coasters buying a bike to get through traffic at stop lights quicker but not looking for super bike speed racing of any kind. I want to get a bike with great mpg and can carry a passenger short or medium distances. I want the bike to look fast and sexi but I don't need the power under the hood.

Sorry for the long story, I just want to make sure I'm getting the right bike for me :)

I'm interested in Either the 250, 500, or 650 blue Kawasaki Ninja, With all the above information, what would fit me best? Also what year would be best for me?

Also why does everyone say I will "get bored" of the 250 if I so choose it? I don't understand why I need to get to speed faster so long as I get to speed in a reasonable time to keep up with the flow of traffic.
Also I live in Fremont, CA I read that 500r are not allowed here because of incorrect emissions?
I love how the first 3 answers was every difference choice I asked. For real, Im looking for reasons why too unless i get like 20+ ppl saying the same type of bike :)
 
I had a ninja 250 for 4 years and wish that I never got rid of it. Those things are more fun to ride than any other street bike I have ever been on. My first wife got fat and that thing still hauled her around just fine. I would go with a new ninja 250 if you plan on keeping it a while, replacement parts cost the same for a new bike and a used bike if you drop it. It's really hit and miss with buying used, allot of people don't take care of their bikes like they should and you can inherit their mistakes.

If you find yourself wanting more power an aftermarket exhaust can add up to 5hp.
 
I had a Ninja 250r for a short while when I got my license. I am a smaller female, 5'3 115lbs and I got bored with the bike quick, and I am not into speed or anything either. The 250 was about right heightwise for me, but when I would ride on the highway, the guys on cruisers would just blow me off the road, and leave me in the dust. You are a big guy, so I think you would be fine on the 650r. That is what Im riding now, and it is good on mpg, good for passengers and good on the commuting,even on highways.
 
The Kawasaki 250R top speeds 100 mph and will accelerate 0-60mph faster than 95% of cars out there. It is more than you need on the streets. "Bored" only means they want to ride crazy fast.

Kawasaki made the 250R quite larger in 2008. Other than $7K versus $4K and faster there is very difference between the 250cc versus the 650cc:
