I just finished off a batch of a mix that can be used a number of
ways.
Refried beans
Seasoned hamburger
cooked rice
stewed tomatoes
diced onion
diced green and red peppers
hint of curry
hot sauce or chili powder to taste
Mix it all together and store or freeze what will last more than the
first 7 days.
I use this as a filling, topping or side dish for soft and hard tacos,
Corn Tostadas, burritos and empanada filling.
It can be additionally spiced with more seasoned veggies or
seasonings, topped with lettuce, tomato, oninon, hot peppers and
various sauces to make different tasting meals of it.
I didn't include quantities for each item because the point is to make
it according to your own likes and dislikes. I use a LOT of tomatoes
because thats how I like it. Some like it with LOTS of hamburger.
It's also very inexpensive to make. Great for a dorm meal or for those
who are tight on money and long on appitite. Its adaptability to
various methods of serving it and seasoning it, make it great for
repeat meals that don't seem the same.
It's all in seasoning it differently for each type of meal.
Lots of cooked rice in it will also make it less expensive and a great
filler to bulk out the dishes.
