What else to do with Hummus?

Okay, I decided to experiment. First of all I took a little hummus
and added some olive oil to it to see what happens. It smoothed out.
So, now I know the smooth stuff has olive oil in it, it's not just
thinned out with water/bean juice. Then, I took it a step further and
mixed in some vinaigrette that I had on hand to make a hummus dressing
and I am now eating it on the mixed salad greens I had on hand. Oh,
man is it ever tasty! I'll do this again.

Thanks for the link! I see my salad dressing idea isn't original and
again I see it for falafel. I guess the thin white sauce I get with
my falafel is hummus! I prefer tzatziki sauce though. Do you know
what the red stuff is? It's supposed to be "hot", but I don't get any
heat from it.

They call it "hot sauce", but it's really a paste and they put it on
the pita before the rest of the stuff goes in. That's all I know.

sf,

It's living dangerously that I love about you so much.

You could try a small batch with fresh or dried basil in it...

Mind you... AT YOUR OWN RISK!!!

I would! :)

Best,

Heheh. I'm going to try adding more cilantro first, thanks.

It is unlikely to be hummus, it's probably taratoor which is a
tahina, garlic and lemon juice sauce. Arabic mustard. The red sauce is
probably a form of muhammara, which is a red pepper sauce, doesn't have
to be hot.

I prefer something thinner and tangier than straight hummus for
use as a dressing. Red stuff in tzatziki? I don't see anything
red in mine, which contains cucumber, dill, and garlic.

I was talking about falafel sandwiches. The red paste stuff they
spread in those.

Yes, I'm not sure what it is diluted with at a typical falafel place.
It's clearly way thinner, and less flavorful, than straight tahini
would be.

I was told it was chili sauce, but it's not like any I've ever tasted.
Have you seen it for sale and do you know what I'd ask for if I went
someplace like Haig's?

For whatever reason, the exact chili sauce used by many falafel
places is fairly hard to find in stores, or to duplicate. I would
like to know a good source for it.
