That's what occurred to me after watching last night.
If they decided to make the selection process more like "The Apprentice"..ie, different projects to test marketing and general business skills etc..then there should have been more emphasis on making a profit. They should have been given a set budget for different projects, then at least we (the audience) could have seen who was capable of understanding the profit motive behind running a business..regardless of their cooking skills.
However, that begs the question..why would skillful, experienced entrepreneurs seek out a couple of would-be entrepreneurs, without cooking skills, to be partners in a restaurant ? Surely the original idea was for the business-orientated Raymond, Sarah and David to be looking for talented amateurs, who are enthusiatic about running a restaurant but may lack business acumen.
