Chili Con Carne
Brown 1 lb of ground beef in oil & drain excess fat.
Add a chopped onion, & crushed clove of garlic.
Simmer for 15 minutes or transfer to slow-cooker.

Add 1 sm can tomato paste, & 1 can of stewed tomatoes;
or 1 lg can of regular tomato sauce.
Add a couple of tbsp of chili powder, to taste,
or 1 tbsp oregano, 4 tsp cumin, 1 tbsp paprika.
Add hot sauce or chili peppers to your taste.
Simmer for another 15 minutes if using fry-pan.

Add 1 can of pinto or red kidney beans.
Allow total cook time of at least 3 hours in crock-pot.
 
The easiest way is to buy a packet of chili season mix from the grocery store and follow the recipe on it. The only thing I do differently is to chop and brown an onion with the ground beef. I also add an extra can of beans and diced tomatoes instead of tomato sauce. Simmer for about 15-20 minutes and enjoy.
 
Listen, chili needs the onion flavor. Mince a small onion. I fry ground meat and Bob Evans med sausage in a large skillet.add the minced onion and some minced garlic in the last 2 minutes of frying. You will not see the onion or garlic, they kind of melt.
