That is a place I really want to see! I imagine it's absolutely
beautiful. Sand dunes in the Gobi desert were impressive because of
their height, but I can hardly wait to see the white dunes in New
Mexico.

Do I need to correct that? Perhaps I misread your post, thinking you meant
the pistachios were lunch, but rereading it sounds like it's something you
added to your regular lunch.

It gets cold in NM... It had some of the coldest temperatures in the
US, this last Feb. Just because it is a lower latitude, doesn't mean
it is warmer. It is also a higher elevation: Santa Fe is over 7000

And believe it or not, NM also is the oldest winemaking region in the

I can assure you, I eat more than six pistachios at lunch. Most lunches are
leftovers from the previous night's dinner. I've never taken any
particular steps to lower my cholesterol as it has always been in "normal"
ranges, this just made it better. Real butter, eggs, and red meat are a
part of my diet all the time.
Good luck, I hope you get the same results I did. The lady I share the nuts
with has also had better results, but I don't know the numbers. At least it
is a pleasurable thing to do rather than cut out lots of good foods.

It is a truly beautiful place. The last time we were in that area there
was a lunar eclipse and we went out to White Sands to see it. Before it
went into eclipse, the moon was full. I can't describe the effect of
those white sands in the moon glow. "Otherworldly" or "pearlescent"
maycome close.
They had a bunch of amateur astronomers out there with telescopes set up
for people to look at the heavens. We could see the Milky Way with our
naked eyes.
