Physical flexibility as related to countries' cultures?

I'm having a debate with my boyfriend. I think that in American culture, overall, people (especially older people) are less flexible than people in some other cultures. I used Japan as an example, since they kneel on the floor to eat, and I know from teaching yoga classes than many older Americans have trouble even doing that.
He says that flexibility statistics are pretty much universal, and that kneeling to eat may help that increase specific flexibility in that one position, but not overall. (Here, I argue that the sitting on the floor thing is indicative of a greater range of movement/positions and therefore points to a greater overall flexibility.)

What do you think??
 
Kneeling down to eat doesn't make you flexible. Please take a class in Kinesiology. However. Us Japanese people are more nimble than Americans that is a fact.
 
I agree to a certain point. It also depends on many individual factors, although culture can certainly affect it as well.
