...intimidated!! Any ideas? I have never cooked anything for him before and am looking for something great but not too hard! I am NOT a great cook.
 
forget about what he does for a living. this is just about two people.

make a nice salad. add some crusty bread. boil some water. cook some pasta. saute onion and sweet peppers with butter/oil and garlic, add some shrimps. add some tomato sauce. salt & pepper. a splash of wine if you have it. basil. oregano. let the sauce get happy and serve on top of the pasta.

a simple rustic meal. and shrimps are good for feeding each other.
 
The way to any mans heart is a good roast free range chicken, home made stuffing (ask around the women in the family) use fresh herbs, pack herb butter under the skin of the chicken breasts and do a whole pile of lovely roast vegetables to go with and some greens. I tell you anybody who cooks for a living appreciates anything anybody cooks for them as long as it is tasty and not burnt. Remember you can keep your eye on a roast and basically it all goes in the oven together. Serve with hot rolls and good butter. He will love it, and will appreciate your effort. If you can do a home made pie as well for after,

(CC, I gave you a thumbs up!) The soup sounds just like my favorite soup from the Olive Garden!

Here's a recipe for chicken tortilla soup:

Cut bite-size chunks of chicken (1 to 1 /2 lbs.) and add to a large pot with olive oil and 2 tbs. of grill seasoning, 1 tbs. ground cumin -- cook
Then add onions
bell peppers
garlic
chipotle (in adobo - 1 to 2 peppers)
1 large can of stewed tomatoes
1 small can of tomato sauce
corn
5-6 cups of chicken broth
For garnish (optional) -- sour cream, cheese, avocado, cilantro
Right before you eat, add to your individual bowl some crushed tortilla strips.
