(CC, I gave you a thumbs up!) The soup sounds just like my favorite soup from the Olive Garden!
Here's a recipe for chicken tortilla soup:
Cut bite-size chunks of chicken (1 to 1 /2 lbs.) and add to a large pot with olive oil and 2 tbs. of grill seasoning, 1 tbs. ground cumin -- cook
Then add onions
bell peppers
garlic
chipotle (in adobo - 1 to 2 peppers)
1 large can of stewed tomatoes
1 small can of tomato sauce
corn
5-6 cups of chicken broth
For garnish (optional) -- sour cream, cheese, avocado, cilantro
Right before you eat, add to your individual bowl some crushed tortilla strips.
