That said, I own and recommend the Rebel XS. It's a great camera, easy to learn and use. The build is superb and so are the photos.
Never base any purchase of one of these devices on price - wrong approach. If you can't afford what you want right now wait but don't buy another device simply because it's cheaper - that has always led do disappointment - bad idea.
Many photo class instructors prefer you use a film SLR. They do this so you learn the basics about full control of shutter, f/stop, ISO, etc.
I only mention this because unless you know that you can use a digital camera for your class you may want to look into that.
I have 3 digital cameras, two point and shoot by Fuji and my XS. The Canon is by far my favorite simply because of quality photos. However remember this, even the $35,000 Hasselblad is only as good as the person behind it. Sloppy technique can ruin the quality of even the best camera out there. I hope that to learn technique is why your going to school - that's a good thing.
