How do you turn off the flash on a canon rebel Xs (1000d)?

Take the camera out of 'auto'.

Use it using the aperture priority mode and adjust the aperture until the camera shows that you are shooting at high enough shutter speed to hand hold without camera movement causing a blurred image

There really is a lot of information in your cameras user manual.

Download it in a PDF file and you can use the "find" feature to search for specific questions.

Since I own an XS I agree in part. In any control mode you can access the advance menus. There you will find one labeled flash control. Follow the instructions.

Also, this is up to you of course, you may find the single focus point usable. When I first got my camera I was shooting a large event using all 7 points. I found that many of my subjects ended up out of focus because another object or person was closer and that's where the camera grabbed focus.

With single point (I use "P" or program mode all the time rather than auto) you aim at a target and that's your focal point. On full auto you'll always get 7 points, in program mode everything is normal accept two functions, that I've found so far. You can control your flash and your focus points.

As fhotoace put it, there's a wealth of information in your manual.
You can download a pdf version from Canon USA that seems to work better for me than the book does but, I'm always in the book looking up something.
