Buffet style reception foods?

Okay so I'm planning my wedding and now the only thing that I am stuck on is the food. We're going to do a buffet style reception but I need some ideas. We don't want any fancy foods or anything like that. Maybe ideas of stuff that we can make on our own in large quantities? I was thinking about beef tips and gravy, but I don't know what else to make with it if we go with the beef tips. I want to give my guests a variety to pick from but not spend my life's savings....
 
what about fried chicken, grilled chicken breasts and legs, or baked ham with scalloped or baked potatoes, turkey , veggies and dip, chips baked beans, any or all the above are just a few ideas, hope they help also meatballs and gravey with whipped potatoes and a vegetable would be good. Home made rolls, fresh fruit or fruit salad, yum i am making myself hungry. congratulations on your wedding.
 
We had an incredible dish.. made with stuffing, turkey slices or pieces, and you take cream of chicken soup, chicken broth, put sage into the broth,, mix all together... cover with foil, and bake. It can be made easily in a large roaster, like the day ahead and then just plugged in. It's awesome. You can make a small batch to test before and see if you like it. It's different than most things that are served at buffets, we did it at our wedding, and 5 ppl that came liked it so well they served it at their wedding.
Meatballs are also very good.. with the cream of mushroom sauce or maybe a light barbecue sauce.
Another good one,,, for large amounts of people.. and you can do it ahead..
you take chicken... pieces You take corn flake crumbs, oregano and Laury's Seasoned salt. Put in a large container that you can use to dip your chicken and cover it. Roll your chicken in egg, dip in the flake mixture, lay in a baking pan (foil, from restaurant supply or GFS if you have them) Layer it up, cover with foil, and bake til chicken is done, probably 2 hrs. Excellent chicken, easy to make, easy to serve.

I have served any of these to very large groups with awesome comments and requests for the recipes. They are easy to make, easy to serve, and you can buy and freeze the chicken when it goes on sale until you get enough. I would plan on 1 pc per person.

pasta is always easy and usually a big hit when it comes to receptions- (and not too costly- a little goes a long way when it comes to portioning) whether you do a baked ziti or a primavera... or both! and if you decide to do the beef tips, roasted potatoes might be a good option as a side for that.
 
I wouldn't do anything with gravy. Can you see that stuff spilling on someones lovely dress? Stick with foods like baked ham, roast beef, pasta salads, regular salads, rolls, cheese, pickles etc..
