We had an incredible dish.. made with stuffing, turkey slices or pieces, and you take cream of chicken soup, chicken broth, put sage into the broth,, mix all together... cover with foil, and bake. It can be made easily in a large roaster, like the day ahead and then just plugged in. It's awesome. You can make a small batch to test before and see if you like it. It's different than most things that are served at buffets, we did it at our wedding, and 5 ppl that came liked it so well they served it at their wedding.
Meatballs are also very good.. with the cream of mushroom sauce or maybe a light barbecue sauce.
Another good one,,, for large amounts of people.. and you can do it ahead..
you take chicken... pieces You take corn flake crumbs, oregano and Laury's Seasoned salt. Put in a large container that you can use to dip your chicken and cover it. Roll your chicken in egg, dip in the flake mixture, lay in a baking pan (foil, from restaurant supply or GFS if you have them) Layer it up, cover with foil, and bake til chicken is done, probably 2 hrs. Excellent chicken, easy to make, easy to serve.
I have served any of these to very large groups with awesome comments and requests for the recipes. They are easy to make, easy to serve, and you can buy and freeze the chicken when it goes on sale until you get enough. I would plan on 1 pc per person.
