You certainly pulled up a breakfast post from the past!
I usually just eat breakfast so I make the most of it. The rest of the
day I drink water and snack on fruits and veggies, crispbread & garlic
hummus, etc. Mostly anything that I'll easily tire of chewing. A diet
measure I addopted years ago.
Another thing, for me is breakfast isn't limited to typical breakfast
foods.
I don't know about breakfast in Spain vs. America. From a couple years
of Breakfast posts and from real life experience, lots of folks can get
by on coffee and minimalist breakfasts or late breakfasts or just
coffee.
I think many people also just don't have the time, perhaps, hurried to
get ready for work and the commute to work, etc. That is pure
speculation on my part.
I wake up with a large breakfast appetite! "Fuel for the day!" Sometimes
I'll have a late lunch. If I have dinner, I typically don't sleep so
well.
I believe in the saying:
"Breakfast is gold
Lunch is silver
Dinner is lead"
