Yamaha R6 skipping and heating up?

I have a 2007 Yamaha R6 with 41xx miles. It's starting to skip a little while going down the road. It's also heating up a little faster then it should this could be the weather it usually runs at around 165-175 degrees now it's hitting 189-202degrees. I haven't had a diagnostic test yet but plan on next week. Could it simply be bad gas "water" or the o2 censer? Also I don't abuse the bike at all. Does anyone know what it could be?
For the Heating part. I live in Florida it's 91* on average here all of my bike usually run at around 160*
Actually it was WATER in the GAS. Emptied the tank flushed the lines runs like a champ again. And btw I'm not a beginner, I was simply asking possibility's.

It might just be the weather its been over a 100 degrees lately. But then again i have never owned a yamaha R6. Bikes are very sensitive to external temperatures be it hot or cold. But the only bikes i ride when its hot outside are the naked variety? 2008 triumph street triple. The heat doesn't get trapped in the fairings so it rides a little cooler.

Could it simply be bad gas "water"
No, could be preignition from low octane fuel. That is a high compression engine. Using premium? Do they sell a "summer blend" in Florida? Could be a culprit.
or the o2 censer?
No not even the O2 sensor but a lean fuel injection mixture could cause hot running. Your plug color is? Injectors are clean?
Does anyone know what it could be?
Yep could be a lot of things but it sounds like you really haven't worked on bikes much. When did you last flush the coolant or check the level? Oil up to level and fresh? Air intake temp sensor pass the test? Pay for the diagnostic It's probably your best bet. That's a complex machine for a beginner to go thrashing around in.
