Would you be open to paying different rates for different kinds of cooking classes?

Would you pay different rates for American vs. Ethnic cooking classes?
Longer vs. shorter classes?

What kind of rate would be open to paying for a
1 hr American cooking class
2 -2.5 hr Indian (india) vegetarian cooking class?
