You know how to use a clutch properly on a car. I will agree that having used a manual transmission will be of some help but it's not the same by a long shot. I'm 6'5" so I appreciate your height situation. I ride a BMW1200 as much for comfort as my appreciation of it as a quality machine. However, starting on medium large bikes could eat into your initial pleasure as you're fighting the bike, not learning to ride properly. And then you've the problem of limited supply. Find someone who is very knowledgeable about bikes and have them help you make a decision. Should they know of-or be willing themselves give you lessons so much the better. Do not ask a dealer. They are there to sell you a bike. Some better than others but ask around. Anyone you see on a bike in your town, ask where they bought it, their experience, how they like their bike etc.
I've been riding for fifty years but the smartest thing I did was to take lessons and get certified. Not only has this saved me money in insurance but has allowed me to participate in events for which certification was required. Best of Luck. Welcome to the club.
