The system on the Droid is called "Android." It's used on a number of phones released in the past couple of years. The Droid name is Verizon's trademark names for their phone models.
Android is a great system, based on an open-source platform, which means it's updated frequently and is capable of lots of customizations. The Android Market is incredible, with nearly 40,000 available items, including tons of apps, wallpapers, themes, etc.
I wouldn't use Windows on a cell phone if Microsoft paid me and gave me the phone, to boot. I can't stand it on computers, so I'll never use it on a phone.
Android is rapidly becoming the #1 mobile system in the world. Since the beginning of this year, Android-based devices have far outsold iPhones and Blackberry devices.
Go with the Droid. In fact, if you can swing it, get the Incredible. I own a Google Nexus One, which is very similar, and it's a great device.
