Will I lose the documents I saved once my trial for Microsoft on Mac has run out?

I've downloaded a free trial of Microsoft for Mac, but I'm worried if I start writing up my school work it will disappear after the trial has run out. Does this happen? Or will it still be saved, but in a different format? I'm new to Mac so go easy on me :p

So does that mean I have to buy the program after the trial to retrieve my 'lost' documents?
