Wilderness camping? Where to call?

My brother and I would like to go on a bit of an adventure. We'd like to rent two horses (plus one pack horse) and ride out into the wilderness for about 4-5 days of camping. We found a few places that will send us out with a guide, but we would prefer to go alone (having a stranger around may be a bit odd). We can travel anywhere in the world to do this and would like to do the trip in the spring or fall.

Any suggestions?
