AND, since he's supposedly "all-knowing," he KNEW it was going to happen! So why would he get all p-o'ed when it did??

That thing is not the way you thought it is,the thing is God only wants them to obey him and the only way he can derive that attitude from them is from what they are seeing,that is why he used tree for them,there is no evil in that tree but there is evil in the act of decission made by them to eat the fruit.
