Why was Gunbuster's last ep in B&W

Actually the Gurren producer/Gainax co-founder, Takami Akai, was the one to quit, due to his snarky comments against 2ch. Osamu Kobayashi (4th episode director) was likely just meant to be a one-shot episode director in the first place.

Anyway, not much to add about Gunbuster other than it's not automatically easier to do something in black and white. Some might argue it's harder, because all you're working with is shades of gray.
 
It's actually referencing old black and white "news" updates they used to run in Japanese movie theatres back in the 1940s, I believe. They'd give you stats about how many planes were shot down, how many ships went down, etc,.

I think it looks outstanding though. I wish more anime would try black and white/monochrome. People these days have a serious hate-on for the artistic merits of black and white cinematography.
