why is this 2000 ford explorer still running?

how is this sohc v-6 still running when the oil has not been changed in
31,000 miles
 
As long as the car has good spark, good air, and good fuel then it will run regardless of the oil changes.

Oil is meant to lubricate and cool the engine as well as it has additives to keep out moisture (Hydrophobic) and it cleans too (detergents).

Changing oil or not has nothing to do with if a car runs or not.

If the three principle aspects are present the car will run. Assuming that compression and a few other variables are still good as well.
