Why is my 2000 jeep 4.0L sport wrangler overheating?

I am having a little overheating issue in my jeep. I have replaced the water pump, radiatior cap, and flushed out the radiator. It doesn't run in the red, yet it runs a little warmer than 210(lets just say the needle is over the zero of 210) which is a little above opperating range. The problem is i can run my jeep around town locally for about 3-4hrs and have no heating issue, but when i jump on the interstate @ 70mph to travel 45 min. thats when it starts to run hot (needle never goes in the red but the resevoir does boil) would anyone know what this could be? I am very desperate for answers!
