Why is Iron Chef Italian never used in the TV show Iron Chef?

If you have ever watched the Japanese show Iron Chef, then you might know what I am talking about. It is a competitive cooking show which is gaining a cult following around the world. There are 4 'Iron Chefs' which are apparently the 'masters of their chosen cuisines': Iron Chef Japanese, Chinese, French and Italian. A random challenger, usually a renowned chef in a certain Asian resturant, challenges the Iron Chef at their cuisine where their meals are judged at the conclusion of the show. Obviously, the Iron Chefs generally win. However, although the Iron Chef Italian is advertised and in the title scene of the show, he is never used in the actual competition. There was even one challenger who was an expert at Italian food and when choosing his challenging Iron Chef, the host said to him, "Unfortunately we do not have an Iron Chef Italian, so you will have to choose another". The guy ended up choosing the Iron Chef Japanese and obviously lost.

Does anyone who is a fan of the show know why Iron Chef Italian is not used? I do know that it is shown relatively late at night on SBS (Australian international TV station), so the episodes there COULD be repeats, but I am not sure about that, as the title scene still shows him as one of the Iron Chefs.

BTW, I am watching the Japanese version, but it is dubbed in English.
