Why is defiance of the Gods such an important factor in greek culture?

Odysseus defied Poseidon, the God of the Sea, when he claimed that the Gods had not helped him defeat Troy.

Hercules's entire existence was a defiance of Hera, the Wife of Zeus.

Why did the greeks put so much importance on human freedom?
