Why don't you ever forget some skills like riding a bike, but forget other

things like algebra? Is there some psychological reason for this? If it's muscle memory, why do muscles remember so easily?
 
The difference is which is more difficult for your own brain to remember. Riding is bike is not as involved as algebra. Riding a bike can be easily recalled simply by watching someone else do the same. You can't do that with algebra. With algebra, you have to concentrate and literally use your mind to figure it out, rather than letting your pencil do the work.
 
Check out "mirror neurons". It's 'hard wired' into the brain. Nova Science Now had a good explanation of it called I think "monkey see, monkey do" (literally studying mirror neurons in u guessed it- monkeys).
