Why does water come out of beef when you cook it?

Today, my dad made homeade beefaroni (yum!). He put the ground beef on the pan without adding oil to fry it. He said that it wasn't necessary because water comes out of the beef, and that water keeps the beef froom sticking to the pan. Why is water inside the ground beef (it was fresh, never frozen)?

Also, I watched Food, Inc. I know what they do to the cows. I don't eat hamburgers as often as I used to. I don't normally eat beef, but, today, I had to because my dad is a great cook. How could I refuse?
Water doesn't come out of chicken or pork when you put them on the pan. Why does it come out of ground beef?
