Why does the restaurant industry have such a high turnover rate, even still?

Does anybody work in a restaurant or has in the past, how long did you stay or how long would the new employees stay? Why did you/they quit? Reason I ask is I am trying to get a job as a server and was told by one of the restaurants manager that they are full right now but will be calling me because of high turnover rate, and this is a big chain restaurant.So I'm assuming that they would train them well before going on the floor, but idk. But does anybody know why? Thanks!
