Why does saliva gather in your mouth when you are doctoring a wound?

I know this is random but i have asked many people if they have noticed this and they said that yes it happens to them. When you are doctoring a wound or concentrating on something i guess...saliva gathers in the front of your mouth....also when you see someone hurt...why does your gums secrete that taste that taste like iron or blood but you are not bleeding. Random i know but i was wondering if anyone knew....couldn't seem to locate my answer on google.
