Why do you cooks use a pinch of salt in a sweet dish?

I'm getting ready to make an apple pie or some other sweet meal and almost every recipe i see for some sweet baked treat always requires a PINCH of salt. Why is that? I put salt on spcy stuff and meats not inside sweet goodies!! Why put a pinch of salt in something that is supposed to be super sweet?
