Why do some people assume that the original "sin" in the Garden of Eden was having sex?

And why would "The Tree of the Knowledge of Good and Evil" be used as a symbol of having sex for the first time? Why would that be an important "lesson" for such a story? (And why would sex be considered evil, especially after God kept looking at each part of creation and said "It is good.")
