Why do people jailbreak their iphones?

I know what jailbreaking means, but how come the developers of apps dont just copy the authorization code off of an authorized app.
Also, how can an app that jailbreaks an iphone work an iphone? The jailbreaking app cant be authorized by Apple, so how do they get their app to work? I'm assuming they just copied an authorization code, so why can't the developers
