why do people call things that are against a particular culture "racist"?

It's prejudiced, not racist, unless you are against the whole race. If someone is against Mexicans, they aren't racist, but prejudiced, or bigoted. If someone is against Hispanics, they are racist. If someone is against Germans, they are bigoted. If they are against whites, they are racist.
 
There is no such thing as race anyway! White, black, hispanic, whatever, all humans are the same race!

Once I said something a little.. politically incorrect about gay men and I was called a racist!
People are stupid.
