Why do Japanese cooks use a ladle with a wok? Wouldn't a spatula be better?

That's a good point! I've seen those heavy duty cooking chopsticks and they seem pretty useful! Now I want some. But the ladle...?
Yeah, but they do it with rice, even. (Although most of my Japanese cooking knowledge comes from manga. *blush* Mangakas are notoriously bad at cooking.)

Mark S., that sounds highly likely and satisfying!!! I better go rewatch some old Iron Chef episodes and monitor the liquid content of wok happenings. But the rice... they cook it first. Maybe there is no reason.
