Why do I tip after my credit card has been swiped at a restaurant?

I was just wondering why I always tip after my card is swiped instead of before. It seems to only make sense that the restaurant waiter would get the final final total after tip once. Why and how do they swipe a card that is approved and add the tip after?
 
at my restaurant we "finalize" our tickets at the end of our shift. On our computers we type in how much your final bill is after you tip. Then it sends the info to your bank or credit card people or whatever and takes it out of your account. This is why its important to leave your signed copy with the tip amount on the table. Can't tell you how many times I've lost out on a tip because the people took the wrong slip!
