why do i eat less but put on weight?

i loss about 30lbs and now trying to maintain the weight.basically i only ate fruits most of the time and small quantity of protein(eg.small chicken or nuts).i want to lose the flabby skin and gain muscles but when i started eating protein,i gain weight and it stays for about a month now.plus i do exercise too.
so WHY???
