Why do games glitch to 256?

In a lot of games, if a proper glitch is done, something gets altered to being 256. In Final Fantasy 3, for the SNES, if you have Relm "Sketch" Gau as he jumps back from learning his abilities, all your items quantities are boosted to 256. In Castle Crashers, an arcade game for the Xbox360, you can get all your characters to be level 256, when the level limit is 99. How is it possible? I really don't know, but it has something to do with glitching the game code. I REALLY wanna know why games do this. Help?
