What is the scientifc or technical reason for this. I have had a garder for years, but people have been telling me to use broke egg shells and used coffee grinds. Why does this help a garden? is there a chemical that helps tomato plants? anyone?

Egg shells = sulfur

Coffee grounds - good source of composting soil texturizer. Compost in general is the best thing you can do for your garden.

You can get a test kit at the nursery to test the soil you are growing your tomatoes in, to see what it is they need. Soil pH is very important - and also, you will have to have bees in your area to pollinate the blooms or there will be no fruit - unless you can take a little paintbrush and pollinate them yourself. I have tried that and it didn't work.

Fertilizers address 3 things: stem strength, amount of foliage, and amount of blooms. I forget th breakdown of which chemicals address which part. Your nursery can help you with this - and you should test your soil.

The coffee grounds are nothing more than a type of ground up wood chip from coffee beans instead of lumber. Like all wood chips, they will make the soil acidic.

The egg shell is calcium, it will neutralize the soil. So you are adding two amendments that the plants roots can take acid or calcium from as they need it. The roots find the best distance from the amendment particles where the soil ph is perfect for them and grow in the perfect zone.

I've been using both of them in my container garden I have been told the coffe grinds add acidity & egg shells sulphur. What I do is take the used coffee grinds & fill the coffee pot with water & pour some in the soil I do this once a week especially with my tomato & azalea plants they love acid lol I also throw egg shells in the soil too I've been doing this for about 5 yrs now & it really helps
