Why do americans call University and college, just college in general.?

In the USA, college and university are pretty much the same thing. Both offer undergrad studies, but I think only Universities offer post-grad.

The definition of "college" varies greatly between countries.

It is basically the same thing here. A university and college both offer undergraduate studies to earn a Bachelor degree. A university will also offer Master and Doctorate degrees.
