Why cant a player take a break for a portion of the game and then come back...?

I heard that if a player takes a break or stops playing, he is automaticly finished for the rest of the game. WHY is this???

I dont see why a player shouldnt be allowed to take a break and rest for a few innings and then come back later. what about running out of pitchers with no one left in the bullpen? Why cant they come back later?
