Why are some cultures vegan?

Some cultures are vegan because of tradition or religion, not necessarily personal choice. Why is it bad to eat meat in those cultures or religions? What would happen or not happen if someone in those cultures ate meat? I hope someone will answer who was raised as a Buddhist or Hindi or some other vegan culture, but any ideas would be appreciated.
