Robert Downey Jr - because he can do different types of roles and plays each part like he is working from a blank canvas, and I love that about his acting.
hmmm there are lots to choose from, and it always changes over time, but currently I'd say my favorite actor is. Edward Norton or Ethan Hawke. There are a lot I really like and it's difficult for me to pin it down to one. Also got a lot of time for Zach Braff.
Paddy Considine - Underrated!
Jared Leto - Notably for Requiem For a Dream - before he made his poxy band.
Meryl Streep - Incredibly versatile.

Edited to say I would have to add Robert Downey Jr, have loved him ever since I saw Chaplin as a young teen and his performance blew me away and I think Meryl Streep is supremely talented though I don't like all her films
