Who were the people in Chinese culture that were invisible?

What was the name of the certain level of society where people were ignored, or treated as invisible? They worked with the dead, and things like that.
 
Are you sure it's Chinese culture that you're thinking of? The four classes in Ancient Chinese culture were the Shi(nobles), Nong(farmers), Gong(Artisans), and Shang(Merchants).

The "untouchable" class that you describe reminds me of the Dalit caste in the Indian Caste system. Other lesser known societal "outcasts" include the Burakumin(Japan), the Beakjeong(Korea), and the Khadem(Yemen).
