Who is Stan in Dirty Dancing?

I don't mean who plays him, I can find that many times over on Google. I mean literally who is he in the film, what character is he and what does he do?

It's a question raised by the UK West End version; we know the actor, we don't understand the character he is to be playing!

Yeah, I've looked there, I can see he is a character in it. But if I was to watch it, what would he be doing in it?

I can't remember what I've done with my VHS!
