Many of the sugar shacks (In Quebec, "cabanes a sucres") on the north shore offer rides on a sled pulled by a tractor or team of horses. They take you through the woods showing you how they tap the trees and collect the sap. I don't know many that offer hiking trails, but perhaps some do.
The most authentic sugar shack I know of that is close to Montreal is Cabane a Sucre Lalande. They have traditional sugar shack meals, a dinner show, and can even do catering of parties.
Others nearby that are more commercialized include Cabane a Sucre Constantin, and La Villa du Sirop.
All three of these can easily be reached by car, from Route 148 Nord in the St. Eustache area. You can also take the Deux-Montagnes commuter line and it is a short bus or taxi ride from the "Terminus Deux-Montagnes".
