Tripas Asadas
(Grilled Beef Tripes)
4 lbs beed tripas
Water and Salt
Cut tripe 6-8" long, rinse, and boil in water for 30
min., drain.
Roast over medium coals until brown and crisp.
Season with salt. These make great appetizers wrapped in warm
corn tortillas.

Menudo
This is supposed to be a great cure for hangovers, so it's the perfect soup to have on New Year's Day (or whenever you've been celebrating). This recipe serves six people.

Steps:
1. Wash the tripe thoroughly and soak in several changes of water; refrigerate overnight. Remove the tripe from the refrigerator and drain. Rinse in several changes of cool water and then cut into bite-sized pieces.
2. Add tripe, pig's feet and 4 qts. water to a large soup pot and bring to a boil. Skim any foam that comes to the surface of the water.
3. Let boil for 3 minutes and then lower heat to medium. Add garlic, onions, salt and pepper.
4. Simmer, covered, for 3 hours or until the tripe is very tender. Add the hominy, simmer another 10 minutes and then remove from the heat.
5. Remove the garlic cloves, pig's feet and onions. Serve garnished with the scallions, lime wedges and crumbled oregano.
